The added meaning of “Wending”, in Cantonese: Wen 問 ding 鼎, “to aspire to be the best”, manifested in every wine.

This Niagara winery makes wines from local terroirs, using “wild” (indigenous) yeasts, and grapes from older vineyard parcels when they can find them. They encourage low-impact viticulture – especially organics – wherever possible. Everything goes to barrels for long ageing and development – barrels carefully chosen for their “transparency” and ability to help express terroir.
