I don’t know about you, but at the end of every week I have a fridge full of odds and ends leftover from a week of eating nutritious Red Apron meals. The simplest way to deal with these leftovers is to make a SOUP! From your pantry you will need a few items like a canned or dried beans, or some dried pasta, some barley or rice. You will also need stock – vegetable or chicken stock.
For this delicious and nutritious soup (below) I boiled off some white beans, added the leftover vegetables from the weekly meal, which included Brussels sprouts, green beans, diced potatoes, carrots, onions. I diced everything into bite size pieces because for soup, everything needs to fit on the spoon. I also had some ham leftover from one of the fresh meals. It all went into a pot with a bit of leftover tomato salsa for extra flavour.
It was delicious! With a piece of crusty sourdough toast, this fed two of us dinner one night, and lunch the next day. Total cost – almost nothing!
